Recipe Ingredients for Breakfast Burritos - Veggie Style

4 eggs
4 egg whites
12 cherry tomatoes
3 mushrooms, cremini
1 ounce ham
3 oz spinach
3 tbsp sour cream
3 Flour Tortillas, Soft Taco, 8 Inch

Recipe Directions for Breakfast Burritos - Veggie Style

  1. Chop mushrooms, cook over medium heat until slightly cooked.

  2. Add spinach, tossing occasionally to allow all leaves to cook and wilt.

  3. Add ham, tomatoes, heat through.

  4. Beat eggs and egg whites until smooth, pour in with veggies and ham, cook thoroughly.

  5. Warm tortillas, scoop one third egg mixture into each tortilla. Add sour cream and enjoy!
