These are great to make ahead of time and stick in the freezer. When you're ready to eat, just take them out, and zap them for a minute or two, and viola!

Recipe Ingredients for Breakfast Burritos

1 lb sausage
8 eggs
6 oz cheddar cheese
53 tortillas (actually 13 8'' flour tortillas, 220 cals each)

Recipe Directions for Breakfast Burritos

  1. Fry sausage, drain the grease and set aside

  2. Cook eggs until almost done, add cooked sausage and stir in together.

  3. Slice cheese

  4. Combine egg/sausage mixture into tortilla, add slice of cheese and roll up.

  5. Wrap each one in a peice of cellophane and stick in freezer.

  6. REHEATING INSTRUCTIONS:

  7. Remove from freezer

  8. Place in microwave on high for 1-2 minutes or until cheese is melted.

  9. Serve with salsa or ketchup
