quick breakfast: not the best for sodium but I like to cook up a few of them at the beginning of the week and freeze for a quick breakfast

Recipe Ingredients for breakfast burritos

1 cup egg beaters
8 low carb tortillas
4 patties jimmy dean turkey sausage
1/4 cup chopped green pepper
1/4 cup chopped white onion
4 tsp taco sauce
1 serving 2 % Jack cheese shredded

Recipe Directions for breakfast burritos

  1. finely chop or used frozen bagged peppers and onions.

  2. add egg beaters and chopped sausage to the mix

  3. heat tortillas in microwave for 20 seconds until soft

  4. scoop mixture into the middle of tortillas and fold around to make the burrito about 1.5 inch around.

  5. Microwave another 20 seconds to secure the tortilla

  6. add taco sauce or cheese to taste
