Makes a lot, perfect to freeze or toss in the fridge for an on-the-go breakfast that fills you up.

Recipe Ingredients for Breakfast Burritos

10 Flour Tortillas
8 Eggs, Scrambled
1 cup salsa
1 bell pepper, chopped
1 1/2 cup Monterey Jack cheese, shredded
1/2 pound polish sausage, cubed
1 cup potatoes, diced
4 tbsp olive oil
1/2 cup onion, chopped
2 tbsp milk

Recipe Directions for Breakfast Burritos

  1. Heat oil in pan.

  2. Add bell pepper and onion to pan, allow to brown.

  3. Add sausage, break up with spoon, cook until cooked through.

  4. Add in prepared potatoes.

  5. In a bowl, whisk together eggs and milk.

  6. Add eggs to pan, turn to low and stir occasionally. Cook until firm.

  7. Heat tortillas in a skillet.

  8. Fill each with 1/10 of the mixture, top with salsa, roll and wrap in aluminum foil.
