Out with the old and greasy breakfast burrito, here's to the new and improved sexy smart burrito!

Recipe Ingredients for Breakfast Burrito with veggies

1/4 tsp of extra virgin olive oil
2 tbsp salsa
3 tbsp of shredded low fat cheddar cheese
1/4 c fresh cilantro
1 large egg
3 egg whites
1/4 of medium, green pepper
1/2 cup spinach
2 Plum Tomato
1 (12") whole wheat tortilla

Recipe Directions for Breakfast Burrito with veggies

  1. In a bowl whisk together the egg, and 3 egg whites until blended.

  2. Diced the green pepper, and the plum tomatoes.

  3. In a nonstick skillet add 1/4 tsp of olive oil, scramble the eggs together with the green pepper, tomatoes, and spinach, and at the last second before the eggs turn solid add the cilantro.

  4. Add the eggs to the tortilla, top with the cheese and salsa, and fold.
