Recipe Ingredients for breakfast burrito, meatless

2 medium potatoes
4 eggs
2 T milk
3 flour tortillas
1 T olive oil

Recipe Directions for breakfast burrito, meatless

  1. Microwave the potatoes slightly then cut into chunks. Place in small or medium skillet with olive oil. Brown potatoes to desired color.

  2. Beat eggs with milk, add salt to taste. Pour over potatoes. Stir as they cook, cook until done.

  3. If serving right away, heat tortilla in microwave for 30 seconds then fill with egg & potatoes;

  4. If serving later, place plastic wrap on counter, add a paper towel to plastic wrap, then lay tortilla (unheated) onto paper towel;

  5. Add filling and salsa if desired. Roll tortilla into burrito shape. If making ahead, after rolling, roll plastic with paper towel around it and store in fridge. Heat in microwave 60-90 seconds.

  6. Remember these choices may add calories, but are delicious alternatives to mix it up:

  7. cheese (fat free)

  8. salsa

  9. chopped onion

  10. chopped bell pepper

  11. your choice of breakfast meat, cooked.

  12. These burritos are delicious, portable, inexpensive and hold you over for hours. Great to eat on the run, too!
