Recipe Ingredients for Breakfast Burrito Filling

1 lb. turkey sausage
1/2 green pepper, chopped
1 jalapeno pepper, chopped
2 green onions, chopped
1/4 cup onion, chopped
3 cups egg beaters
1 cup cauliflower (pureed)
2 eggs
2 T parmesan cheese
1/2 cup sour cream (fat free)
1/4 t pepper
1/4 t salt

Recipe Directions for Breakfast Burrito Filling

  1. brown sausage with green pepper and onions

  2. meanwhile, mix the remaining ingredients in a large bowl

  3. add this mixture to the sausage mixture and cook until set

  4. Serve with whole wheat tortillas, salsa, etc.
