Large bran muffins that have blueberries & pecans. Can adapt this recipe for other mix-ins.

Recipe Ingredients for Breakfast Bran Blueberry Muffins (Jumbo size)

2 1/2 c. bran
2 Tbsp.molasses
1/2 c. brown sugar
1/3 c. oil
2 large eggs
3 c. buttermilk
1 c. chopped pecans
2 c. blueberries
1 tsp. orange extract
1 tbsp. orange zest
1 tsp. cinnamon
2 c. flour
3 tbsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt

Recipe Directions for Breakfast Bran Blueberry Muffins (Jumbo size)

  1. Lightly butter muffin tins. Preheat oven to 400*

  2. In a large mixing bowl: Mix bran, sugar and spices with all WET ingredients, including blueberries & nuts. Let sit for half hour (30 min) for bran to completely soften.

  3. In another bowl: mix together sifted flour, baking powder, baking soda, & salt.

  4. Add all DRY ingredients into WET bran mix and FOLD gently, just until dry ingredients are wet, using a rubber spatula. DO NOT OVER MIX. Batter should be thick and sticky. If batter is a little too dry, add juice from orange or a tad more buttermilk as needed.

  5. Using spatula, spoon into jumbo muffin tins (did you butter them?).

  6. Bake for ~20 min. at 400*, then turn down to 375* for the last 15 min., until toothpick comes out clean.

  7. Let cool a bit before turning them out of the tin.
