Mexican style beans with tomatoes and green chilies. High in fiber.

Recipe Ingredients for Breakfast Beans

3 cups pinto beans
1 tbsp olive oil
1 tbsp onion powder
1 tbsp cumin
2 tsp salt
10 oz can tomatoes

Recipe Directions for Breakfast Beans

  1. Soak beans overnight and then drain.

  2. Put beans in large pot and cover with about 1/2" of water. Add oil and simmer for about 3 hours. Stir occasionally and add water as needed.

  3. Then add onion powder,cumin salt and tomatoes.

  4. Simmer for about 30 minutes.
