Perfect on the go breakfast. Mushrooms and black olives are canned.

Recipe Ingredients for Breakfast - 3 x 3's

9 eggs
10 oz. frozen spinach
6 oz. canned sliced mushrooms, drained
4 1/4 oz. canned ripe olives, chopped
1 cup shredded cheese, lowfat
6 slices provolone cheese, lowfat

Recipe Directions for Breakfast - 3 x 3's

  1. Dump 9 eggs, box of frozen spinach (defrosted and squeezed until all the liquid is out) and blend it well with a fork until the spinach is all mixed in. Add mushrooms, shredded cheese and 1 can chopped olives. Mix well.

  2. Pour into a 9x9 baking dish sprayed with EVOO or canola oil.

  3. Bake at 375 degrees for 35 minutes. Keep an eye on it and when the center starts to look cooked add 6 slices of low fat cheese on top. Brush (or spray) the top with EVOO. Put back in oven for about 10 minutes or until the cheese starts to brown.

  4. When cool, slice into 9 pieces & refrigerate or freeze in ziplock baggie.
