Pounded thin pork tenderloins and low fat mozzarella cheese, breaded with a fine breading make this tasty main dish.

Recipe Ingredients for Breaded Pork Stacks

1 cup low-fat, skim mozzarella cheese, shredded
20 ounce pork tenderloin, pounded thin
2 large eggs, beaten
1 cup bread crumbs
4 tbl olive oil

Recipe Directions for Breaded Pork Stacks

  1. Preheat oven to 250 degrees.

  2. Pound tenderloins, cut in half.

  3. Divide mozzarella among 5 pounded tenderloins, stacking one-half on top, sandwiching cheese in center.

  4. Season with salt and pepper.

  5. Place the flour, eggs, and bread crumbs in separate bowls.

  6. Coat pork with flour, then in eggs, and then in bread crumbs.

  7. In large skillet, heat olive oil over medium high heat.

  8. Add pork stacks and cook, turning once, until golden, about 4-6 minutes.

  9. Transfer to a paper-lined cookie sheet/pan and put in ovent to keep warm.
