Recipe Ingredients for Breaded Eggplant

1 medium eggplant, sliced
116 g breadcrumbs, seasoned
2 eggs, beaten
1 spray olive oil, for frying
1/4 cup tomato paste
3 dashes Tabasco sauce, if you like
1 tbs Paprika
1 tbs oregano
1 medium onion, diced

Recipe Directions for Breaded Eggplant

  1. Fry onion in pan first. Place into bottom of a deep dish baking pan.

  2. Dip eggplant into egg then crumbs before frying lightly. Place the slices over the onions in layers.

  3. Mix tomato paste and seasonings with enough water to bring to a catchup like consistency. Add any other seasonings to this you would like. Pour over the eggplant and bake (add cheese on top at this point if desired) for ~half hour in a moderate oven.
