Crispy eggplant, good for use in sandwiches or as base for eggplant parmesan. NOTE - should have used LF mayo but I didn't have any in. Calorie count will reduce if use LF or FF mayo.

Recipe Ingredients for Breaded eggplant

1/4 c mayo
1 T onion, minced
1 lb eggplant
2/3 c breadcrumbs
2/3 c parmesan
1 t oregano
4 oz mozzarella, part skim

Recipe Directions for Breaded eggplant

  1. Slice eggplant. Mix mayo and onion well, brush on both sides of eggplant slices.

  2. Mix crumbs, parmesan and oregano. Dip eggplant slices in crumbs and press crumbs on to adhere well.

  3. Bake at 425 12-15 minutes. Turn, and bake 12-15 minutes more. SHould be crisp and golden brown.

  4. Place mozzarella on top, and bake or broil to melt.
