Makes 48 servings



Basic white bread (makes 4 loaves)

Recipe Ingredients for Bread

2 1/2 cups water
2 cups 1% milk
1/4 cups canola oil
4 1/2 tsp yeast
2 tsp sugar
1/4 cups sugar
13 cups flour

Recipe Directions for Bread

  1. soften years in 1/2 cups warm water with 2 tsp sugar. Let stand 10 minutes; stir.

  2. Scald milk.

  3. In a large mixing bowl, combine scalded milk, cold water, sugar, salt, and shortening; stir until sugar is dissolved.

  4. Cool until lukewarm and stir in yeast.

  5. Stir in half of flour and beat vigorously with wooden spoon until mixture is smooth and elastic.

  6. Add enough flour to obtain a soft dough that does not stick to bowl.

  7. Turn out on lightly-floured board and kneed until smooth and satiny, 8-10 minutes.

  8. Place in a large greased bowl, turn to grease top. Cover with plastic wrap and towel. Let rise in a warm and humid place until double in bulk, about 1 hour.

  9. Punch down. cut dough into four equal pieces; shape into balls, cover and let rest on the board 10 minutes.

  10. Shape into loaves and place seam side down in greased loaf pans. Grease top of loaves. Cover with cloth and let rise until double in bulk, 45-60 minutes.

  11. Preheat oven to 200C (400F).

  12. Bake loaves about 35 minutes. Remove from pans and cool on racks. Cool completely before wrapping.
