100% Whole Wheat - Buttermilk, low saturated fat High in fiber--great for sandwiches and toast. Modified from King Arthur Flour recipe

Recipe Ingredients for Bread

2 1/2 teaspoons instant yeast
1/2 cup water, lukewarm
3/4 cup buttermilk, lukewarm
1/8 cup orange juice
5 tablespoons canola oil
1 1/2 teaspoons salt
3 tablespoons sugar
3 tbsp potato flour (1 5/8 oz.)
2 cups White Whole Wheat Flour
1 3/4 cups Whole Wheat Flour
1 tablespoon vital wheat gluten

Recipe Directions for Bread

  1. Stir together flours and yeast. Add salt, sugar, gluten. Add wet ingredients, mix until well blended. Knead by hand or in mixer (about 5 minutes.)

  2. Place dough in greased bowl, cover, and let rise until doubled. Gently punch dough down, shape into log, and place in 9x5 loaf pan. Cover and let rise to about 3/4" above pan top (about one to two hours.) Preheat oven to 350*

  3. When loaf has completed rising, place in oven for about 30 minutes or until center reaches 190*. If desired, tent a piece of foil over loaf midway through baking to prevent overbrowning of the top.
