I?v been hearing about monkey bread for a while now and it has been something that has stuck in the back of my mind. The only reason for not making it earlier, is that every recipes calls for ready made pilsbury buttermilk biscuit dough. So i was looking around to find a nice buttermilk biscuit recipe because here in the UK we dont have pilsbury. This is divine and so easy. For those of you who dont know what monkey bread is, it is literally dough chunks, coated in a cinnamon sugar placed on top of each other in a cake tin, covered in melted butter and sugar and cooked in the oven. So you end up with this squidgy, doughy, buttery, sugary loaf that just rips into pieces. And as monkeys eat with their hands and pull things apart, hence the name

Recipe Ingredients for Bread, Quick Monkey Bread

600 g flour
440 ml buttermilk
115 g butter, chilled and cut into small pieces
1 tbsp salt
1 tbsp baking powder
1/4 cup sugar (apx)
2 tbsp cinnamon (apx)
115 g butter
100 g caster sugar, golden
1 tablespoon cinnamon

Recipe Directions for Bread, Quick Monkey Bread

  1. Preheat your oven to 220C/gas mark 7.

  2. Mix the flour, baking powder and salt into a bowl. Add the butter in, using your hands mix to form a crumble effect.

  3. When it has combined you can attach the dough hook to your kitchen aid and begin adding your buttermilk. Keep turning till totally combined and knead for about 3-5 minutes.

  4. When the dough looks like it has come together and is smooth, place it on a slightly floured surface and knead for 30 seconds. Cut into tubes and then medium sized chunks. I think you can get about 30-40 chunks from this recipe.

  5. When you have cut them up place them in a plastic bag where you have already combined cinnamon and sugar. Roll them around in batches till they are all covered.

  6. Place them in a lined baking pan, cake tin, muffin holder, whatever you like, and set aside. (Becky: try the big bundt pan?)

  7. Melt the butter and sugar on the stove top for about a minute or so and them pour over the top of the dough balls.

  8. Place in the oven for at least 20 minutes, max 35. Remove and serve.
