You can cover and refrigerate these rolls overnight after placing them in the pan (before the second rise). Remove from refrigerator 1-1/2 hours before baking, cover with a clean kitchen towel, and let rise in a warm place.

Recipe Ingredients for Bread: Orange Cinnamon Rolls

1/4 oz. yeast (1 packet)
1/2 c. warm water (105 to 115F)
1/2 c. milk
1/4 c. sugar
1/3 c. butter
1 tsp. salt
1 egg, lightly beaten
3 c. whole wheat pastry flour (3-4 c.)
4 T. vital wheat gluten

For filling:
5 T. butter, softened, plus extra for pan
1/2 c. granulated sugar, plus extra for pan
1/4 c. brown sugar
1 T. ground cinnamon
2 tsp. orange zest
3/4 c. raisins, walnuts, or pecans (optional)

For glaze:
2 T. butter
1 1/2 c. powdered sugar
1 tsp. orange extract
1 tsp. orange zest
3 T. orange juice

Recipe Directions for Bread: Orange Cinnamon Rolls

  1. To warm the bowl of a heavy duty stand mixer, fill it with warm water, swish around, and pour out. Add warm water and the yeast and let stand until the yeast is dissolved, about 5 minutes.

  2. If using raisins, place in a saucepan with water to cover by inch. Bring to a boil, drain well, and let cool.

  3. Warm the milk, butter, and sugar over low heat until butter is melted and mixture is 105 to 115F. Add to yeast and mix on low speed for 1 minute.

  4. Increase mixer speed to 2. Gradually stir in 2 cups whole wheat pastry flour and wheat gluten. Add salt after 1st cup of flour.

  5. Add additional flour, about cup at a time, until the dough cleans the sides of the mixing bowl. Dough will be moist and slightly tacky, but not sticky.

  6. Knead on medium low (speed 2) for about 7-10 minutes until dough is smooth and elastic.

  7. Dump dough out and spray the mixing bowl with canola oil spray (don?t bother cleaning out the dough remains inside the bowl). Place the dough in the bowl and turn it over once to coat with oil. Cover with a damp kitchen towel and let rise in a warm place (75 to 80F) until double in volume, about 1 to 1 hours.

  8. While dough is rising, combine 1/3 c. granulated sugar, 1/3 c. brown sugar, cinnamon, and orange zest.

  9. When doubled in size, punch down dough. Turn it out onto a lightly floured work surface and knead briefly to remove any gas bubbles. Let it rest for a few minutes before shaping.

  10. Coat the bottom of a 13 x 9-inch baking pan with butter and sprinkle with sugar.

  11. Firmly throw the dough down onto the counter to deflate any remaining gas bubbles. Roll out into a 24 by 15-inch rectangle. Spread softened butter all over dough. Sprinkle cinnamon mixture over buttered dough. Sprinkle with walnuts, pecans, or raisins, if desired. Beginning at the 24-inch side, roll up dough and pinch edge together to seal. Cut into 15 slices.

  12. Place slices close together in prepared pan and let rise until dough is doubled, about 45 minutes.

  13. Bake at 350F for about 30 minutes or until nicely browned.

  14. Meanwhile, mix butter, powdered sugar, orange extract, and zest. Add orange juice 1 T. at a time until the glaze reaches desired consistency. Spread over slightly cooled rolls.
