Recipe Ingredients for Bread: Oatmeal Strawberry Muffins

1 1/3 c. whole wheat pastry flour
1 c. rolled oats
1/3 c. brown sugar, packed
3 T. flax seed, ground
1 T. baking powder
1/2 tsp. cinnamon
1/2 tsp. salt
1 c. milk
1 egg, lightly beaten
1 T. vegetable oil
2 T. butter, melted
1 tsp. vanilla
2 c. chopped fresh strawberries (or frozen)

For topping:
1/2 tsp. cinnamon
1 tsp. sugar

Recipe Directions for Bread: Oatmeal Strawberry Muffins

  1. Combine flour, oats, brown sugar, ground flax, baking powder, cinnamon and salt in large mixing bowl.

  2. In a separate bowl, combine milk, egg, vegetable oil, melted butter and vanilla. Stir in strawberries.

  3. Add wet ingredients to dry ingredients and mix until just combined.

  4. Spoon batter into muffin cups or greased muffin tin.

  5. Combine cinnamon and sugar and sprinkle mixture on top of each muffin.

  6. Bake at 400F for 20-25 minutes, until slightly brown on top.
