Bread, Jam and Butter Pudding Recipe

A brown bread, raspberry jam and butter pudding for a sweet treat!

Recipe Ingredients for Bread, Jam and Butter Pudding

5 slices brown bread
3 tbsp raspberry jam
3 tbsp butter
4 tbsp cinnamon
2 eggs
25 g white sugar
12 fl oz whole milk

Recipe Directions for Bread, Jam and Butter Pudding

  1. Grease a small cake tray with butter

  2. Butter each slice of brown bread, leaving the crusts on

  3. Spread each slice then with raspberry jam

  4. Cut each slice into two triangle halves, and with the first triangle half, place it at the back of the tray, with the triangle's 'point' facing upwards

  5. With the second triangle half of the slice, cut it again into two smaller triangles. Place these tight and neat infront of the larger triangle, again with the smaller triangle halves 'point' facing upwards

  6. Repeat this with all the slices, keeping the slices nice and neat, and tight and compact

  7. Douse the layers in three-quarters of the cinnamon

  8. Leaving the tray to the side, crack the two eggs into a bowl, and whisk lightly with 20g of the 25g of sugar, until pale and frothy

  9. Gently heat the 12fl oz of whole milk until it is too hot to taste or touch - 'scalding', but do not let it boil. Add the hot milk to the egg and sugar pale, and mix well together with a spoon

  10. Pour the mix over the bread, jam and butter layers in the tray, making sure to cover as much as possible

  11. Pre-heat the oven to 170 degrees, and leave the pudding to soak for 30 minutes

  12. Bake the pudding for around 45 minutes, depending on your oven, but until all of the mix has baked into the pudding, and until the pudding itself is golden brown

  13. Serve cold or hot with custard or cream, or even sultanas, honey and almonds. Or you could eat straight out of the tray, but beware of burning your mouth!
