1 1/2 tsp instant yeast
3 cups whole wheat flour
1 tsp instant yeast
1 tbs salt
2 oz extra-virgin olive oil
1/4 cup raw wheat bran
2 cups unbleached all-purpose flour
90 gram water
1 oz all-purpose flour

Follow recipe directions in the book. I had to add more water, as the dough was way to dry.
