Recipe Ingredients for bread from a homemade mix

9 cups whole wheat flour
8 cups bread flour
1 cup powdered milk (dry)
4 tsp salt
1 cup wheat gluten flour
1 cup packed brown sugar

Recipe Directions for bread from a homemade mix

  1. 1 tablespoon dry active yeast add to

  2. 1 1/2 cups warm water (110 degrees)

  3. when activated stir in

  4. 2 beaten eggs then

  5. 5 cups of the above mix

  6. mix until well blended and let rest 2 minutes

  7. stir in more of the mix to make a soft dough knead 10 minutes til smooth

  8. place dough in a greased bowl to rise until double about 1 hour.

  9. punch dough down and let rest 10 min.

  10. while the dough rests grease two large baking sheets and sprinkle with cornmeal.

  11. divide the dough in half, roll each half to a 10 x 3 in rectangle, roll up starting with one long edge, roll up firmly and pinch the edge tightly to form a log. place seam side down on prepared pans. make diagonal slashes on tops of bread, brush loaves with water. Let rise till almost doubled.

  12. preheat oven to 375 brush with water again. place pan in lower over shelf with 1 inch of warm water. place loaves in center shelf and bake 30-35 minutes until golden brown.
