Recipe Ingredients for Bread, French

4 cups bread flour
2 teaspoons Yeast
2 teaspoons salt
1 1/2 cups warm water

Recipe Directions for Bread, French

  1. 1. Save 1/4 cup of bread flour on your clean counter top where you?ll knead the bread.

  2. 2. Place remaining 3 3/4 cups bread flour in mixer bowl.

  3. 3. Spoon the yeast on one side of the bowl, and the salt on the other side.

  4. 4. Pour in the warm water and mix until the dough comes together in a mass.

  5. 5. If dough is too sticky, add 1 tablespoon of flour at a time. If too dry, add 1 tablespoon of water to dough to adjust.

  6. 6. Mix 6 minutes.

  7. 7. Let the dough rest for 7 minutes.

  8. 8. Mix again for 7 minutes.

  9. 9. Sprinkle some of the c flour onto the counter, and turn the dough onto the flour.

  10. 10. Knead the remaining flour into the dough until it is a satiny, smooth, tight ball.

  11. 11. Place the dough in a large, lightly oiled bowl.

  12. 12. Turn the dough over so that all sides have a thin coating of oil.

  13. 13. Cover with plastic wrap and set in a warm place for 1.5 hours. Dough should double in size.

  14. 14. Punch dough and form into a ball. When you poke the dough, it should slowly rise back.

  15. 15. Cut the dough in half; place under the plastic wrap.

  16. 16. Dust the work surface with flour .

  17. 18. Stretch the dough into a big rectangle and fold two sides toward the middle, one side overlapping the other.

  18. 19. Do a karate chop lengthwise down the middle of the bread.

  19. 20. Stretch out the long ends again, and fold over in half (lengthwise axis).

  20. 21. Pinch all sides shut, including the ends, to create a seal.

  21. 22. If the bread is lopsided, let it rest 5 minutes and gently stretch it out (do not knead).

  22. 23. Turn the loaf over, seam side down. Cover with damp kitchen towel.

  23. 24. Shape the other loaf.

  24. 25. Let rest 30 minutes.

  25. 26. Toward the end of the resting stage, preheat oven to 450 degrees Fahrenheit.

  26. 27. Place baking sheet (or covered cast iron pot) into the oven to heat it up.

  27. 28. With a sharp paring knife, make 3 or 4 shallow, diagonal slashes on the surface of the loaf (this allows steam to escape evenly).

  28. 29. Remove the baking sheet. Slide the loaves onto the sheet (or bake one loaf at a time).

  29. 30. Get cup of water ready by the stove.

  30. 31. Open the stove, insert bread, throw the water on the oven floor, and immediately close the door.

  31. 32. Bake 20-25 minutes.

  32. 33. Remove bread and let cool before cutting it.

  33. 34. To recrisp the crust, bake 5 minutes at 375 degrees F.
