another great recipe from Jane Brody's Recipes I have Known and Loved. I use two tbsp of ground flax seed and 6 tbsp of water as an subsitute for the egg. I also cook in a 9x9 pan the cut into squares.

Recipe Ingredients for BREAD-CRANBERRY BRODY

1 cup whole-wheat flour
1 cup all-purpose flour
1/2 cup sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3 tbsp canola oil
4 tsp lemon peel
3/4 cup orange juice
1 large egg
1 1/3 cups fresh cranberries, coarsely chopped
1/2 cup chopped hazelnuts

Recipe Directions for BREAD-CRANBERRY BRODY

  1. Stir together flours, sugar, baking powder, baking soda and salt.

  2. Whisk together the oil, orange peel, orange juice and egg. Add this to the flour mixture, and stir.

  3. Fold in the cranberries and nuts, and pour into a greased 9 x 5 x 3 inch pan.

  4. Bake at 350 degrees for one hour. Let it stand for 10 minutes before turning out of pan, and allow to cool completely before cutting.
