This is a super easy and delicious treat. Makes about six low cal servings. You can use whatever cheese and whatever veggies you like, these are just an example.

Recipe Ingredients for Bread Casseroll

2 slice Bread, Whole-wheat, Commercially Prepared
1 medium raw Bell Pepper Red
1 cup Mushrooms Sliced
1 cup Asparagus
30 grams Ham, Sliced, Extra Lean
50 grams Cream Cheese Spread Light
50 grams Mexican Cheese Spreads
50 grams Mozzarella, Part Skim Milk Cheese
2 grams Spices Ground Black Pepper

Recipe Directions for Bread Casseroll

  1. 1, Drain canned mushrooms and place in a bowl along with the drained asparagus, chopped bell peppers and ham. Keep the mushroom juice from the can.

  2. 2. Chop up the bread slices into dice and blend into mix.

  3. 3. Melt cream cheese together in the microwave, stir in black pepper and a little of the mushroom juice. Stir carefully and pour into the bread and veggie mix.

  4. Pour blend into a baking dish, cover with shredded cheese and bake in the oven until cheese is golden.
