Carrot Muffins with Cream Cheese Icing

2 c. whole wheat pastry flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
2 tsp. cinnamon
1/2 tsp. ground nutmeg
1/4 tsp. ground ginger
2 eggs
3/4 c. granulated sugar
1/4 c. brown sugar
1/4 c. canola oil
1 tsp. vanilla
2 c. shredded carrots
8 oz. crushed pineapple
1 c. chopped walnuts

For optional icing:
3 oz. low fat cream cheese, softened
1 T. butter, softened
1/4 tsp. vanilla
1/2 tsp. orange extract
1 c. powdered sugar

Recipe Directions for Bread: Carrot Muffins with Cream Cheese Icing

  1. Spray muffin tins with non-stick spray (24 large or 48 mini muffins).

  2. Combine dry ingredients: flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.

  3. Beat together eggs and sugars. Mix in oil, applesauce, and vanilla. Fold in carrots and pineapple.

  4. Add dry ingredients to wet mixture and stir until just moist. Fold in walnuts.

  5. Spoon into prepared muffin tins. Bake at 350F until toothpick comes out clean: 15-20 minutes for large muffins, 12-15 minutes for mini muffins.

  6. For icing: Beat together cream cheese and butter until smooth. Mix in vanilla, orange extract. Gradually beat in powdered sugar until the mixture is fluffy.
