A healthier take on normally rich banana bread.

Recipe Ingredients for Bread - Banana Nut

86 g. light butter
144 g. white sugar
5 g. molasses
90 g. eggbeaters
250 g. banana
250 g. greek yogurt
1 teaspoons vanilla extract
1 teaspoons ground cinnamon
1/8 teaspoon salt
1 1/2 teaspoons baking soda
270 g. gold medal unbleached all purpose flour
56 g. chopped walnuts
35 g. Heath Biys `O Brickle Toffee Bits

Recipe Directions for Bread - Banana Nut

  1. Preheat oven to 315.

  2. Cream together butter and sugars.

  3. Blend in eggs, banana, vanilla and yogurt.

  4. In separate bowl, mix cinnamon, salt, soda and flour.

  5. Fold dry ingredients into wet ingredients. DO NOT USE A MIXER FOR THIS STEP - it will make bread tough.

  6. Fold in walnuts (can sub in or add pecans, chocolate chips, etc)

  7. Pour into three greased pans, and bake for 1 hour, or until toothpick inserted in the center comes out clean.
