These muffins are lightly sweet with crunchy tops. They are dense and bready (not a sweet bread). Adapted from hillbillyhousewife.com.

Recipe Ingredients for Bread: Banana Muffins (Bready)

2 big bananas, mashed
1/2 c. sugar, plus extra for sprinkling
1/4 c. canola oil
1 c. sour milk or yogurt or buttermilk (powdered is fine)
1/2 tsp. salt
2 c. whole wheat white flour
3 tsp. baking powder
1/3 c. oats, plus extra for sprinkling

Recipe Directions for Bread: Banana Muffins (Bready)

  1. Preheat oven to 400F. These muffins come together fast.

  2. Spray a 12-cup muffin tin and 2-3 custard cups with non-stick spray.

  3. Mash bananas until they are almost liquid.

  4. Add the sugar and oil. Beat with a whisk until the mixture is smooth and fluffy.

  5. Mix in the yogurt or buttermilk and salt.

  6. Add flour, baking powder, and oats. Stir until batter is just moistened, but still lumpy, about 15 strokes. Do not mix until smooth; muffins need lumps to give them their characteristic texture.

  7. Fill muffin and custard cups about 2/3 full. Sprinkle each muffin with a generous pinch of oats and sugar.

  8. Bake at 400F for about 15-20 minutes. Remove from the oven and cool for a few minutes before removing from the pans. Serve with butter, peanut butter, or red jelly.

  9. Notes: If desired, you may add a 1/3 to 1/2-cup of chopped nuts during the final mixing. Pecans and walnuts are traditional. Don?t use paper muffin cups for these. The paper really sticks and you lose about 1/3 of the muffin when you try to unwrap it.
