Recipe Ingredients for Bread: Banana Bread, Joy of Cooking

1 1/3 c. whole wheat pastry flour
3/4 tsp. salt
1/2 tsp. baking soda
1/4 tsp. baking powder
5 1/3 T. butter
2/3 c. sugar
2 large eggs, lightly beaten
1 c. mashed banana, very ripe
1/2 c. chocolate chips, mini (can substitute 1/2 c. walnuts or pecans, coarsely chopped)

Recipe Directions for Bread: Banana Bread, Joy of Cooking

  1. Grease a 6-cup loaf pan, or three mini loaf pans.

  2. Whisk together flour, salt, baking soda, and baking powder.

  3. In a large bowl, beat butter and sugar on high speed until lightened in color and texture, about 2-3 minutes.

  4. Beat in flour mixture until blended and the consistency of brown sugar.

  5. Gradually beat in eggs.

  6. Fold in bananas, nuts, and optional chips until just combined.

  7. Scrape batter into pan(s) and spread evenly.

  8. Bake at 350F until a toothpick inserted in the center comes out clean, 50-60 minutes for a large loaf, 40-50 minutes for mini loaves.

  9. Let cool in the pan on a rack for 5-10 minutes before unmolding to cool completely on the rack.
