Recipe Ingredients for brazilian stuffed peppers

4 bell peppers, halved and seeded
1 eggplant, cut into chunks
1 onion, chopped
1 garlic clove, minced
2 T olive oil
14 oz. can tomatoes, chopped
1 t ground coriander
1 t dried basil
6 oz goat cheese, crumbled
2 T dried bread crumbs

Recipe Directions for brazilian stuffed peppers

  1. drop pepper halves into boiling water and simmer 12 minutes

  2. fry onion and garlic in the oil until soft (5 minutes)

  3. add eggplant and cook another 5 minutes, stirring occasionally

  4. Pour in tomatoes, with juice, coriander, basil, and salt and pepper to taste. Bring to a boil and simmer until mixture is thick and eggplant cooked through, at least 10 minutes.

  5. Cool slightly. Stir in 4 oz. of the goat cheese

  6. Spoon filling into pepper halves and place in a shallow baking dish. Top with a sprinkling of remaining cheese mixed with the bread crumbs.

  7. Bake at 350 degrees 25 minutes, until tops are lightly brown and filling heated through.
