Brazilian Stuffed Chicken Recipe

Recipe Ingredients for Brazilian Stuffed Chicken

400 g boneless skinless chicken breasts (4)
500 ml collard greens, stemmed and washed
1 roma tomato, peel, seeded and medium diced
60 ml olives, kalmata pitted and medium diced
60 ml caper berries
1/4 cup yellow onion, small diced
2 cloves garlic, minced
60 ml cilantro, minced
60 ml canola oil

Recipe Directions for Brazilian Stuffed Chicken

  1. Stuffing:

  2. In a frying pan, saute onion and garlic in canola oil until translucent

  3. Add collard greens (stems removed, large chop) and cook till slightly wilted

  4. Add tomato, capers and olives

  5. Season to taste with cumin, corriander and kosher salt

  6. Allow to cool at room temperature for about 10 min

  7. Chicken:

  8. Butterfly chicken (cut in half) and pound out to about 3" x 5" rectangle

  9. Lightly season pounded chicken with salt

  10. Place collard green stuffing mixture in centre of chicken and roll

  11. Secure the seams with bamboo skewer or toothpick

  12. Lightly dust the outside of the chicken with ground cumin and corriander

  13. Pan sear in frying pan till just lightly browned on all sides. Cook in oven till the internal temperature of 74c (165f)
