Also known as Bolinhos de Arroz, this is the veganized version.

Recipe Ingredients for Brazilian Fried Rice Fritters

2 cups rice
1 cup water
3 tbsp soymilk
1 1/2 tbsp Ener-G Foods Egg Replacer
2 tbsp water
1/4 cup onion, finely chopped
1 scallion, finely chopped
2 tbsp parsley, finely chopped
1 tsp baking powder
1/2 cup flour
1 tsp salt
2 tbsp vegetable oil

Recipe Directions for Brazilian Fried Rice Fritters

  1. Mix 1 cup water with rice and bring to a very low boil. Cook until water is absorbed.

  2. Prepare the egg replacer: Mix the powder with the 2 tbsp of water.

  3. In a large bowl, mix the rice with the soymilk, prepared egg replacer, onion, scallion, parsley, baking powder, flour, and salt. Add more flour if necessary - the mixture should be stiff enough to shape into balls.

  4. Heat vegetable oil in skilled or pot. With floured hands, shape the rice mixture into small walnut-sized balls, adding more flour if necessary so the balls hold their shape.

  5. Fry balls for 3-4 minutes, until golden brown. Drain on paper towels. Sprinkle with salt and serve warm.
