So easy! Lime marinated, coconut fish soup.

Recipe Ingredients for Brazilian Fish Soup

3/4 lb. sole fillets, cut in 1/2 in. strips
2 T. lime juice, (organic) zested (juice and zest from 1 lime)
2 T. olive oil
4 cloves garlic
1 c. onion, chopped
1 red bell pepper, chopped
2 jalapeno peppers, seeded and diced
1 c. carrot, chopped
420 g. yam, (fresh) chopped (about 1 med.)
15 oz. tomatoes, canned diced in juice
14 oz. light coconut milk
1 quart vegetable broth
1 1/2 c. cilantro, stemmed and chopped

Recipe Directions for Brazilian Fish Soup

  1. Marinate fish in lime juice 15-20 mins.

  2. In a soup pot, heat oil w/ lime zest, peppers, carrots, and yams. Cook over med-high 3 mins.

  3. Reduce heat to med-low, cover pan and cook till tender (12-15 mins).

  4. Add tomatoes, increase heat to med-high, and simmer till reduced by 1/3 (8-12 mins).

  5. Add stock and simmer. Add fish (w/ lime juice) and cook till opaque (3-4 mins).

  6. Add coconut milk, bring to a simmer and serve, garnished w/ cilantro.
