Recipe Ingredients for Brazilian Black Bean Soup

2 cups dried black beans
1 tbsp olive oil
1 cup onion, diced
1 carrot, diced
1 1/2 cups sweet peppers, diced
1 jalapeno pepper, diced
4 cloves garlic, diced
2 tbsp cumin
1 tbsp basil
1 salt and pepper

Recipe Directions for Brazilian Black Bean Soup

  1. Soak beans overnight with 1 small orange, cinnamon stick, 1 dried chili pod, 1 bay leaf.

  2. Cook for two hours, until beans are tender.

  3. Heat oil in a large frying pan, and add onions, carrot, garlic and spices. As it dries out, add water; when re-heated, add diced peppers. Cook till the mixture is completely heated through, and quite aromatic. Remove orange, bay leaf, chili pod and cinnamon stick from bean mixture; add vegetables and stir. Puree (but leave chunks!) to your own taste; add salt, pepper and hot sauce as needed.
