Brazil Nut Bars Recipe

Lots of nuts and seeds! I made this low carb but you could use rolled oats instead of coconut, add agave or other sweetener and use the nut butter of your choice--original recipe uses cashew butter.

Recipe Ingredients for Brazil Nut Bars

1 c almond butter
1 1/2 c brazil nuts
1 g (36 drops) vanilla liquid stevia
3/4 c whey protein powder
1/2 c pumpkin seeds
1/2 c sliced almonds
1/2 c sunflower seeds
1/2 c ground flax seeds
1 1/2 c unsweetened Coconut
2 T grated fresh organic orange peel
1 t vanilla extract
1/2 t orange extract

Recipe Directions for Brazil Nut Bars

  1. Lightly coat a 9 X 13 baking dish with oil.

  2. Pulse Brazil nuts in food processor until ground into a fine powder. Place in large mixing bowl.

  3. Add protein powder, pumpkin seeds, almonds, sunflower seeds, ground flax, extracts, orange peel, and coconut.

  4. In sauce pan or microwave, heat almond butter & stevia until very hot and bubbling. Add to bowl & mix together using wooden spoon. Immediately press mixture firmly into the baking dish (wear rubber gloves if needed). Let mixture cool in the refrigerator. Cut into 20 pieces and serve. Can wrap each bar individually and store in freezer.
