We made this Slow Cooked Pot Roast over the weekend, I found that the alcohol content was so high that it never burned off. So I've made some changes including the addition of some beef stock. The calorie count on this is a bit off as well, b/c you don't necessary eat all the juices.

Recipe Ingredients for Brandied Pot Roast

4 lbs roast, cut into large pieces
1 large red onion, chopped
4 cloves garlic
4 T butter, unsalted
4 shots brandy
1 cup orange juice, fresh squeezed
1 1/2 cups red wine
1 1/2 cups beef stock
1 t white pepper
2 t sea salt

Recipe Directions for Brandied Pot Roast

  1. Trim meat of fat and cut into large pieces (3 - 4 inches). Season thoroughly with salt and pepper.

  2. In skillet, saute onion in 2 T of butter (you may also want to season the onions), until translucent, mince garlic and add to pan. Saute additional 1 - 2 minutes. Turn slow cooker (dutch oven, crock pot etc.) to high and add 2 T butter. When melted, add meat and brown all sides.

  3. Turn heat to medium and add onions/garlic and remaining ingredients. Stir and allow to boil. Turn heat to low and let simmer for 2 -3 hours until meat is tender enough to pull apart with forks.
