Always moist and easy to make this recipe gets me through two weeks of breakfasts at school.

Recipe Ingredients for Branana Muffins

3 bananas (over ripe is best)
1/4 c. canola oil
3/4 c. sugar
1 egg
1 c. flour
1/2 t. salt
1/2 t. baking powder
1 t. baking soda
3 c. wheat bran
1 c. water
1 c. raisins

Recipe Directions for Branana Muffins

  1. Preheat the oven to 350 F.

  2. Using cooking spray, grease a 12 cup muffin tin.

  3. In a small sauce pan over high heat, bring the water to a boil.

  4. In a medium heat-proof bowl, combine the bran and hot water. Mix to combine and cover the bowl with a plate to let the bran soften in the steam.

  5. In a small mixing bowl, combine the flour, salt, baking soda and baking salt and mix well.

  6. In a large mixing bowl mash the bananas. Add the egg and mix well. Add the oil and mix well. Stir in the flour mixture. Stir in the bran. Mix in the raisins.

  7. Using a 1/4 cup measure scoop the batter into the muffin tins, filling them 3/4 full.

  8. Bake for 25 minutes, or until a toothpick inserted in the center comes out clean.

  9. Cool for 5 minutes in the tin, then turn out to cool on a baking rack.

  10. Stored in the refrigerator they keep well for up to two weeks.
