Very moist muffins and quite versatile. You can substitute in half a cup of whole wheat flour if you prefer and use regular milk, etc. You can add raisins, cranberries, etc.

Recipe Ingredients for Bran Zucchini Muffins

1 1/2 cups wheat bran
1 cup almond breeze
1/2 cup unsweetened applesauce
1 egg
1/3 cup brown sugar
1/3 cup splenda
1/2 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 cup shredded zucchini

Recipe Directions for Bran Zucchini Muffins

  1. Preheat oven to 375

  2. Soak bran in milk for 10 minutes.

  3. Mix together apple sauce, egg, sugar and vanilla and once bran has soaked, add it to the mixture.

  4. In a separate bowl, mix together the dry ingredients.

  5. Add dry ingredients to wet and mix. Stir in zucchini.

  6. Bake at 375 for 15-20 minutes.

  7. Enjoy!
