Recipe Ingredients for Bran-Yammies Apple Muffins

1 cup bran
1 cup fat free milk
1 cup whole wheat flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 c unsweetened apple sauce
1 egg white
1/2 cup sugar
1/8 teaspoon vinegar
1 cup chopped apple
1 cup yams

Recipe Directions for Bran-Yammies Apple Muffins

  1. Bake yams (400 degrees for half an hour) then chill or use unsweetened canned yams

  2. Preheat oven to 400 degrees

  3. Mix bran and milk in a small bowl

  4. Grease 12 muffin cup pan

  5. Mix in medium flour baking powder and salt

  6. Add bran mix: egg white, apples (finely chopped), vinegar, yams, sugar, and apple sauce. Mix

  7. Add wet mix to dry mix. Mix

  8. Do not over mix it is ok if it is lumpy

  9. Add to muffin cups

  10. Bake for 20-25 minutes at 400 degrees
