recipe from Kellogg's website for pumpkin muffins. I altered it according to what I have on hand.

Recipe Ingredients for Bran Sweet Potato Muffins

1 1/4 cups whole wheat flour
1 tablespoon baking powder
1/4 teaspoon salt
1 1/2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/4 t cloves
1/4 t ginger
1/4 t allspice
1 T flax seeds
1 1/4 cups extra fiber All-Bran
1 cup skim milk
3/4 cup raisins
1 cup mashed sweet potato
1/2 cup plain fat free yogurt
1/2 cup granulated splenda
1/4 cup egg beaters
3 tablespoons canola oil

Recipe Directions for Bran Sweet Potato Muffins

  1. Stir together flour, the splenda, baking powder, salt, and spices.

  2. Set aside.

  3. In large mixing bowl, combine ALL-BRAN cereal, milk, raisins, yogurt, and sweet potato. Let stand about 2 minutes or until cereal softens. Add egg and oil.

  4. Beat well.

  5. Add flour mixture, stirring only until combined. Portion evenly into muffin pan cups coated with cooking spray. Sprinkle with a bit more splenda.

  6. Bake at 400 F about 20 minutes or until lightly browned. Serve warm.
