Recipe Ingredients for Bran Pumpkin Muffins

1 cup Pumpkin or Grated Zucchini
2 T Low fat sour cream
1 cup Whole Wheat Flour
1 cup Wheat Bran
1 tsp baking soda
1/4 cup brown sugar
1 tsp cinnamon
1/8 tsp cloves
1/4 tsp salt
1 egg
1 tbsp Extra Virgin Olive oil

Recipe Directions for Bran Pumpkin Muffins

  1. Blend the pumpkin, egg, oil, and sour cream in a blender or food processor until fluffy.

  2. Mix the dry ingredients in a bowl.

  3. Add the pumpkin mixture to the dry ingredients and stir until moist throughout.

  4. Spoon into muffin tins. Fill each about 3/4 full.

  5. Bake at 350 for 20-25 minutes or until done.
