From Richard Watson's book "The Philosopher's Diet"

Recipe Ingredients for Bran Muffins

1 c. bran
1/2 c. whole wheat flour
1/2 c. barley flour
1/2 tsp. baking soda
1/2 tsp. baking powder
1 pinch salt
1 mashed banana
1 egg
2 tbsp. Canola Oil
1 c. Buttermilk

Recipe Directions for Bran Muffins

  1. Heat oven to 425 degrees and grease 6 muffin cups.

  2. Mix dry ingredients together, make a well in center. Add egg and oil; then beat with fork to blend white and yolk. Add buttermilk, stirring only until blended. Spoon into muffin cups. Bake for 20- 24 minutes.
