From the Swank MS Diet Book. Freeze well. This recipe can be kept covered in refrigerator for 3 weeks and used as desired.

Recipe Ingredients for Bran Muffins

2 cups water, boiling
2 cups all-bran cereal
1 1/2 cups sugar
1 cup oil
1 egg
3 egg whites
4 cups low-fat buttermilk
5 cups flour
4 cups bran flakes
5 tsp baking soda
2 tsp salt

Recipe Directions for Bran Muffins

Preheat oven to 400. Pour boiling water over whole bran cereal and let stand. Mix sugar well with oil, beat in eggs and buttermilk and add bran mixture. Combine flour, bran flakes, baking soda, and salt. Stir into liquid mixture. Add dates, raisins, chopped prunes, or apples if desired. Fill desired number of muffin tins one-hal fill and bake for 20 minutes.
