High fiber muffins that don't taste like dirt and don't have a rock hard texture.

Recipe Ingredients for Bran Muffins

2 cups whole wheat flour
1 1/2 cups wheat bran
1/2 teaspoon salt
1 1/4 teaspoons baking soda
6 tablespoons molasses
2 cups buttermilk
1 egg, beaten
3 tablespoons butter, melted
1/2 cup walnuts
1/4 cup dried cranberries

Recipe Directions for Bran Muffins

  1. Mix dry ingredients and wet ingredients seperately, then stir together until just mixed.

  2. Bake in muffin tins at 350 degrees. Toothpick test.
