actual recipe: 1.5 cups all bran 1 cup buttermilk 1 cup whole wheat flour i changed for calorie sake let buttermilk soak in all bran for 10 minutes 375 for 15-20 minutes

Recipe Ingredients for bran muffins

1 9/10 cup all bran
1 cup buttermilk
2 tablespoon olive oil
0.33 cup unsweetened applesauce
1 egg
0.66 cup sugar
1/2 teaspoon vanilla
0.88 cup whole wheat flour
1 tsp baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1 teaspoon baking powder
9/20 cup raisins

Recipe Directions for bran muffins

  1. 1 1/2 cups wheat bran

  2. 1 cup buttermilk

  3. 1/3 cup vegetable oil

  4. 1 egg

  5. 2/3 cup brown sugar

  6. 1/2 teaspoon vanilla extract

  7. 1 cup all-purpose flour

  8. 1 teaspoon baking soda

  9. 1 teaspoon baking powder

  10. 1/2 teaspoon salt

  11. 1/2 cup raisins

  12. Directions

  13. Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or line with paper muffin liners.

  14. Mix together wheat bran and buttermilk; let stand for 10 minutes.

  15. Beat together oil, egg, sugar and vanilla and add to buttermilk/bran mixture. Sift together flour, baking soda, baking powder and salt. Stir flour mixture into buttermilk mixture, until just blended. Fold in raisins and spoon batter into prepared muffin tins.

  16. Bake for 15 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Cool and enjoy!
