Bran Muffins with walnuts and cranberries.

Recipe Ingredients for Bran Muffins

1/4 c butter
1/2 c brown sugar
1/4 c molasses
2 large eggs
1 c 1% milk
1 1/2 c bran flakes
1 c whole wheat flour (remove about 1 tbsp)
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 tbsp ground flax seeds
1 tbsp sesame seeds
1/2 c walnuts
1/2 c dried cranberries

Recipe Directions for Bran Muffins

  1. Heat oven at 400 degrees.

  2. Grind flax seed to rough grind.

  3. Cream butter and brown sugar, add molasses and eggs, beat well.

  4. Add milk and bran and let stand.

  5. Meanwhile, sift together flour, baking powder, baking soda, salt. sesame seeds and ground flax.

  6. Add to wet ingredients and stir only until combined.

  7. Add walnuts and cranberries and stir as little as possible.

  8. Bake for 18 to 20 minutes.
