Recipe Ingredients for bran muffins

2 eggs
1/2 cup unsweetened applesauce
1/2 cup oil
1 cup buttermilk
1 cup water
1 1/2 tsp vanilla extract
1 cup flour
1 cup whole wheat flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt
2 cups wheat bran
1 cup frozen blueberries

Recipe Directions for bran muffins

  1. mix all ingredients together except for the blueberries

  2. cover and refrigerate overnight

  3. preheat oven to 400 degrees

  4. mix in frozen blueberries

  5. fill greased muffin tins

  6. bake for about 30 minutes
