Recipe Ingredients for Bran Muffins

1 cup raisins
2 cups bran
1 3/4 cups boiling water
1/2 cup egg beaters
4 tablespoons olive oil
1/4 cup molasses
1 1/2 cups skim milk
1 2/3 cups whole wheat flour
1 cup all purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1 tablespoons baking powder
1/2 cup splenda

Recipe Directions for Bran Muffins

  1. Place raisins or chopped fruit in a bowl and pour on water and let soak for 5 min. Add bran and let stand 10 minutes.

  2. Beat together eggs, oil, 1/2 cup sugar(or sugar sub) molasses. Stir in milk or buttermilk. Stir in raisin/bran into milk. Sift dry ingredients and fold liquids into dry ingredients. Bake at 400 degrees for 20 min.
