High fiber, low fat, yummy muffins Note: You might want to use less sugar and applesauce, and more vanilla and cinnamon. I'm still refining it!

Recipe Ingredients for Bran Muffins

1 1/2 cups All-Bran Cereal
1 cup buttermilk, fat free
1 cup all purpose flour
1/3 cup sugar
1/2 tsp salt
2 1/2 tsp baking powder
1 tsp cinnamon
1 tsp vanilla
1 large egg
1 tbsp grapeseed oil
1/2 cup unsweetened applesauce

Recipe Directions for Bran Muffins

  1. Place the bran and milk in a mixing bowl. Let the mixture stand for about 20 minutes until the bran is softened.

  2. Preheat oven to 375 deg F.

  3. Sift the flour, sugar, salt, baking powder, and cinnamon into a mixing bowl. Whisk together with the bran mixture.

  4. Add the vanilla, egg, oil, and applesauce. Whisk until smooth. Do no over mix.

  5. Line a muffin tin with muffin papers and fill each muffin paper with an equal amount of batter. Bake for 20 minutes.
