Recipe Ingredients for Bran Muffins

350 grams bananas
1/4 cup flaxseeds
3/4 cup water
1 tsp vanilla
1 tsp baking soda
3 oz wheat bran
2 oz rolled oats
2 oz pecans
2 oz currants
1/4 cup honey
4 oz carrots
47 grams oat bran

Recipe Directions for Bran Muffins

  1. Preheat oven to 375 F. Lightly oil nonstick muffin pans.

  2. Mix the flaxseeds with the water. Let stand 5 minutes.

  3. Add the bananas, vanilla and baking soda. Mix in the bran and oats, then the walnuts and currants.

  4. Bake 15-20 minutes.
