Recipe Ingredients for Bran Muffins

2/3 c raisins
8 oz apple juice concentrate
1/4 c orange juice concentrate
1 1/2 c whole wheat flour
1/2 c Wheat Germ
1 1/2 c unprocessed bran
1 1/4 teaspoon Baking soda
1/2 c chopped nuts
1 tsp ground cinnamon
1 1/2 c low-fat buttermilk
2 egg whites, slightly beaten
1/3 c instant nonfat dry milk
2 tbl margarine, melted and cooled

Recipe Directions for Bran Muffins

  1. preheat oven to 350, lightly grease muffin tins.

  2. 2. in small saucepan, combine raisins, 1/4 C of apple juice and the orange juice concentrate. Simmer, stirring occ. For 5 min.

  3. 3. Blend in a mixing bowl the flour, wheat germ, bran, baking soda, nuts, and cinnamon.

  4. 4. in a sep bowl, beat buttermilk, egg whites, dry milk, butter and remaining apple juice conc.

  5. 5. Combine the dry with liquid blending thoroughly in a few strokes. Fold in the raisins with their cooking juice. Fill the muffin tins 2/3 full.

  6. 6. Bake until a toothpick comes out clean about 20 minutes.

  7. Variation: Add 2 med apples or pears, diced, along with the nuts. Subs. 1 cup oats, oat bran or barley flakes for unprocessed bran.

  8. 1 large muffin (12 in a recipe) = 1 1/2 Whole grain servings; 1/2 protein serving; very high fiber. Fruit variation adds 1 other fruit serving.
